Blueberry overnight oats

Ingredients

Oats

  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseeds
  • 1 teaspoon ground cinnamon
  • ¾ cup almond milk

Yogurt layer

  • ½ cup plain yogurt
  • 1 tablespoon honey or maple syrup

Top

  • 1 cup frozen blueberries
  • 1 tablespoon chia seeds
  • Lemon zest

Instructions

  1. Make the blueberry compote. Heat the blueberries in a saucepan for 15 minutes, then allow the mixture to cool. Mash it with a fork and add chia seeds. Set aside.
  2. Mix all ingredients for the base together and pour into a large jar.
  3. Mix the yogurt layer and spread on top.
  4. Repeat for the blueberry layer and add lemon zest.
  5. Refrigerate overnight.
  6. Enjoy!
